One and a quarter cups rice flour
Quarter teaspoon salt
One and a half teaspoons baking powder
Quarter cup Walnuts, toasted and chopped
Four ounces or 113 grams unsalted butter, softened
Third cup of raw honey
One and a half cups mashed bananas
Two eggs, whipped


1. Preheat oven to 180 degrees C. (350 degrees F)
Place Walnuts in a single layer on a baking sheet and cook for 10 minutes.
Remove from oven, set aside to cool.  Chop when cool enough to handle.
2. In a medium bowl, combine flour, salt, baking powder and walnuts.
3. In a small bowl, combine butter and honey until creamed.  Add bananas and whipped eggs.
4. Add butter and banana mixture to flour mixture and gently mix.
5. Spoon into oiled muffin tins.
6. Bake for 35 to 40 minutes
